christmas in july (celiac – sorry diabetics, this one is definitely not for you)

ingredients ::

1 bunch green seedless grapes, sliced

1 bunch red seedless grapes, sliced

1 honeydew melon, cubed

1/4 watermelon, cubed

1 pint strawberries, topped & halved

1 cup apple juice (i like nantucket nectars)

1/4 cup honey (clover honey is nice)

1 bunch mint

directions ::

start by pouring your apple juice and honey into a small sauce pot and reduce over medium heat for about 15 minutes, stirring occasionally (note, this will not thicken the mixture appreciably, it is just intended to blend the honey and apple juice together smoothly)

while your apple juice mix is reducing, slice your fruits as directed. while it may be tempting to skip slicing your rolly-polly grapes, do not neglect this step. the key to a good fruit salad is to let the juices mingle.

toss fruit gently in a medium bowl.

rough chop your mint

when your apple juice mixture has been on the stove for 15 minutes, turn off the heat and add your chopped mint while the mixture is still hot.

let stand until mix returns to room temperature then pour it over the fruit salad and chill for 1 hour to overnight (this particular fruit salad benefits from extra time to marinade).
