ingredients :: crust

  • 1 pkg flour tortilla shells (medium or small)*

ingredients :: sauce

  • 1/2 cup extra virgin olive oil
  • 1 bunch fresh basil (chopped fine)
  • 2 tbsp dry flaked garlic
  • 2 tbsp fresh grated parmesan cheese

ingredients :: toppings

  • 1 lb (16 oz) shredded mozzarella cheese
  • 1 cup feta cheese (crumbled)
  • 1 cup fresh crimini mushrooms
  • 1 cup chopped red onion
  • 1 cup chopped bell pepper (red, yellow, and orange are sweeter than green)
  • 1/2 cup sliced black olives
  • 1/4 cup fresh chopped tomatoes

directions

heat oven to 350 (for regular crust pizzas i recommend a much higher heat, but it will burn your tortillas if you try it with this recipe)

in small bowl mix olive oil, fresh chopped basil (save out 2 tablespoons of chopped basil), dry flaked garlic, and parmesan cheese.

lay tortillas on cookie sheets (4 medium/6 small)* and paint tops with oil/basil mixture all the way to the edge.

sprinkle mozzarella cheese evenly over all the pizzas.

sprinkle feta cheese on all pizzas in the same manner.

top with vegetables except for the tomatoes and cook for 5-7 minutes each;

or for a real burst of flavor sear all your veggies except for the black olives and tomatoes in a hot frying pan before placing them on the pizza (this imparts an authentic *grilled* flavor to your pizzas - DO NOT sear your black olives in this fashion as it tends to cause them to sour).

top with fresh chopped tomatoes and the fine chopped basil you saved out from the sauce

*medium tortillas are 9″-10″ across, small are 8″ or smaller.

large tortillas (12″) are not recommended for this recipe unless you have individual round cookie sheets that they will fit on by themselves.

    Sounds yummy. Have you tried purple bell peppers? Thems some good vittles.

    i have, but the purple peppers are very much seasonal. i’ve only seen them at my store once so far this summer.

    That sounds good. I’m going to have to try it. Maybe you can come up with a multi grain dough recipe for Pizza.

    oops I see you use tortillias ok there is a wheat or multi grain tortillia that we can use.

    When we did South Beach we used multi grain tortillas. They were just as good.

    yes. you can get some good ones @ the bakery department of your local supermarket.

    garden of eatin, mission, and mama lupe’s all make good whole wheat tortillas that have enough fiber to fit in with any low carb diet.
